AMANIDA DELS BONS HOMES
This salad is a modern reconstruction based on what we know that people in Catalan farmhouses offered to the Cathars fleeing the Inquisition: apples and nuts.
Ingredients (for 4 people):
- 1 starking apple (or royal gala or another red one)
- 1 golden apple
- 1 granny smith or queen apple
- mixture of different lettuces and herbs for dressing (chicory, endive, red lettuce, watercress, canons' herb,...)
- A handful of peeled walnuts
- A handful of raisins
For the vinaigrette:
- 1 part vinegar, 4 parts oil 0.4 olive oil, salt, pepper, a handful of peeled walnuts and 1 teaspoon of honey (optional)
Preparation:
Make a vinaigrette by putting all its ingredients in the blender for a moment. Clean and cut the lettuce into small pieces. Put them in a bowl and mix them with the vinaigrette and nuts. Cut the apples without peeling them, first into three or four pieces and then thinly slice them.
To present it in an original way, use a mold that is 10 or 12 cm in diameter and 6 or 7 cm high. Place the mold on the serving plates and fill it with apple slices all the way around so that the edge of the skin is always facing the walls of the mold. Combine the different types of apples so that a tower is left. Fill the hole in the middle of the tower with the salad, making it protrude. Finally, very carefully remove the mold and decorate the plate with a few pieces of walnut and drops of vinaigrette.
