COSTELLES DE XAI AMB SALSA JURVERT

Refreshing dressing very similar to mint English sauce.

 

Ingredients (for 4 people):

  • 4 pieces of 350g rack of lamb chops (or 16 cut ribs)
  • Oil
  • Salt

 For the sauce:

  • A glass of good white wine vinegar (if it's not good, the vinegar is unpleasant)
  • A handful of parsley
  • A few mint leaves
  • 3 tablespoons of sugar
  • A splash of water
  • A clove of garlic
  • A few peppercorns

 

 Preparation:

 

To make the sauce, dissolve the sugar in hot water, add the rest of the ingredients and blend until the leaves are chopped. You can make it a day or two in advance, but if so, the leaves will lose color.

 

Roast the lamb in a hot oven with salt and oil for about 10 minutes and then let it rest for another 5 minutes. If you have ribs, you can grill them.

 

To serve, place the meat on a plate and a small bowl of sauce for each guest.
