Cami dels Bons Homes

PANADA DE PEIX

This is the dish that identifies the Bons Homes. The perfect Cathars used to take it with them on their travels and often cooked it at gatherings of people who "understand good".

 

Ingredients (for 4 people):

 

For the dough:

  • 1.5 glasses of water
  • 1 glass of oil
  • 1 kg of flour
  • 1 sachet of yeast (optional)
  • Salt

 

For the filling:

  • 1.2 kg of onion
  • 1/2 kg of tuna (or 1.5 kg of fresh sardines, or another type of fish)
  • Oil, salt, parsley, an egg (for painting)

 

Preparation:

 

To make the pasta you must knead all the ingredients vigorously. Once done, let it rest and stretch it with a rolling pin. Then spread it on a baking sheet. Add the chopped onion, lightly sautéed, and the fish (if it's tuna, crumble it; if it's sardines, open it, debone it, and place it next to each other). Salt it, add the chopped parsley and cover with more pasta. You put it together by screwing it and pinching it with your fingers. Decorate it with strips of pasta and brush it with egg. Make a couple of holes in the lid to let steam escape during cooking. Bake in the oven at 200 ºC until the breading is golden brown.
