PORRADA O CEBADA
It is called porrada when prepared with leeks and cebadía when prepared with onions.
In the proceedings of the Inquisition trials against the last Cathars, a declarant explains that he heard heretical fugitives hiding there speaking in Occitan about porrada.
Ingredients (for 4 people):
- 2 onions
- 1 bunch of leeks
- 300 g of raw almonds
- 1 l of water or vegetable or fish broth (the "carnivorous" version can be with meat broth)
- Oil, salt and pepper
Preparation:
Clean, chop and mix the almonds with the water or broth. Let the mixture sit overnight. Strain it and your almond milk is ready.
Sauté the onions and/or leeks, clean and not too thickly cut. Add the almond milk and let it boil. If you want, you can put it through a blender. You can also thicken the cream with a little rice starch dissolved in water. Adjust the salt and pepper. Finally, if you want, you can sneak it.
